I try this with my dog and he doesn’t back up but instead jumps or play bites like it’s a game. I try to immediately make him sit again and reward him when he does. Am I just teaching him to jump?
And for dogs who don't respond to treats?
Except for sport dogs, this ruins the heel work…when you want your dog closer to you but you train them to back away from you it’s counterproductive. I see how this could work for just a pet dog but, this will not work in all cases of jumping for all dogs.

This training makes sense. …but how do you train a dog who gets something he's not supposed to have to drop it and then he gets a treat??? He's stubborn and won't give it up until he gets a treat.

Yes, exactly. My mum has bernese mountain and this big prick loves to greet people by jumping and hugging them out of happiness. But when we come to visit, I am always dirty and my grandma fell many times becouse of it. all our relatives are angry at this.

I see this working for you while training but I would have liked to see how you delt with it when grandma comes in and you are not in front of him.
My brother’s tiny dogs would jump to human eye level for attention. I told them if the dog is jumping, then there is no dog in the room. My sister in law was dense and told the dogs I was saying mean things as they jumped, but even she eventually got the point.
If the dog is jumping, you behave like it literally does not exist. No eye contact, no talking to it, no praise, no correction, no pats, no gestures, no change in tone of voice or mannerisms, just turn body a quarter turn away and ignore. Eyes at eye level. When dog puts all fours on the ground then you greet it. If it jumps up again, ignore again.
Works for me every time. Trained my brother’s dogs in two minutes.
Great lesson, it’s important to start as early as possible. They are just like humans, their brains are developing as they grow
